Food Story

Short grew up reading her dietitian mother’s food and nutrition newsletters and asking endless questions about nutrition labels on food products while grocery shopping. Fast forward to her undergraduate studies in nutrition and dietetics, Short appreciated learning about the many dimensions of food - from preparation to consumption, and how dietary patterns are related to overall health. Post-undergrad, Short worked with patients as a clinical RDN which further opened her eyes to the many factors that influence an individual’s ability to access nutritious food items. With this fresh perspective, she pursued public health nutrition research. Short is dedicated to the research and evaluation of practical and sustainable food as medicine programs that may be culturally tailored to those with limited access to nutritious foods across the U.S.
