Food Story

During her undergraduate years, Cai had the opportunity to run hospital-based food pantries alongside cancer care navigators as an intervention to reduce outcome disparities among immigrant patients. There, she witnessed firsthand how making food choices and having access to healthy food options was a privilege and not a guaranteed right. Cai has since pursued any opportunity to prioritize nutrition security and equity in her practices, from counseling to research, with a special focus on families and migrant populations.
